  1. Prepare the caramel

    Melt the sugar in a saucepan until it turns amber. Remove from heat, add butter, then slowly stir in the cream. Pour the caramel into tartlet shells and sprinkle with fleur de sel. Let it cool until fully set.

    Do not stir the sugar while melting to avoid crystallization.

  2. Make the lemon curd

    Whisk the eggs with sugar until smooth. Add cornstarch and mix. Heat the lemon juice and gradually pour it into the mixture while whisking. Return to low heat and cook until thickened. Remove from heat and incorporate the butter gradually until smooth.

  3. Assemble the tartlets
