  1. Cook the potatoes

    Wash the potatoes and cut them in half if they are large. Boil them in salted water for 15–20 minutes, until fork-tender. Drain and let them cool for a few minutes.

    Avoid overcooking so the potatoes keep their shape.

  2. Smash and roast

    Place the potatoes on a baking tray lined with parchment paper. Gently flatten each potato using the bottom of a glass. Brush generously with olive oil, sprinkle with paprika, and roast at 200°C (400°F) for 15–20 minutes until golden and crispy.

    Leave a little space between the potatoes so they crisp up evenly.

  3. Prepare the dressing

    In a large bowl, combine the mayonnaise and Greek yogurt until smooth. Add the flaked tuna, chopped hard-boiled eggs, chives, finely chopped red onion (or shallot), salt, and pepper. Mix well.

    Taste and adjust the seasoning before adding the potatoes.
